Blackberry Vanilla Bean Ice Cream
This is the recipe that inspired me!
The changes I made:
Firstly, I did use an ice cream maker so I didn’t use cold coconut milk.
Then I used my own vanilla bean ice cream recipe.
2 cans full fat coconut milk
2-3 vanilla beans, slit in half with a knife and remove seeds
2 tablespoons honey
2 teaspoons vanilla extract
pinch of salt
Whisk together all ingredients in a large bowl Pour into ice cream maker. Turn it on!
When the ice cream looked almost done I poured in the blackberry syrup and let it work a little more. It didn’t seem like it was freezing up after I added the syrup so I removed the ice cream and froze it till it was just right. It turned out super good!
